You will develop textured protein ingredients based on extrusion processes using regional plant raw materials for use in novel plant foods. Starting with literature research in scientifically relevant databases, your practical activities will include planning and execution of laboratory and pilot plant experiments as well as evaluation and presentation of results. The main focus of your work is the investigation of interactions between formulation, process and product parameters in the production of textured plant protein ingredients. It is also expected that the results will be published in scientifically relevant peer-reviewed journals.

FRAUNHOFER-INSTITUTE FOR PROCESS ENGINEERING AND PACKAGING IVV THE FRAUNHOFER-INSTITUTE FOR PROCESS ENGINEERING AND PACKAGING IN FREISING HAS A VACANCY FOR A DOCTORAL STUDENT (F/M) EXTRUSION OF PLANT PROTEINS Your tasks You will develop textured protein ingredients based on extrusion processes using regional plant raw materials for use in novel plant foods. Starting with literature research in scientifically relevant databases, your practical activities will include planning and execution of laboratory and pilot plant experiments as well as evaluation and presentation of results. The main focus of your work is the investigation of interactions between formulation, process and product parameters in the production of textured plant protein ingredients. For this work, sound knowledge of process engineering, rheology and the chemistry of starch and proteins is required. In addition, basic experience in instrumental analysis for the characterization of functional product properties is required. It is also expected that the results will be published in scientifically relevant peer-reviewed journals. What we expect from you You have a university degree in Process Engineering, Food Technology, Food Sciences, Bioprocess Engineering or Biotechnology, Chemical Engineering or a comparable discipline. Additional qualifications in extrusion, mechanical engineering or rheology are of advantage. Your personal strengths include scientific work and a keen interest in developing new fields of research within the framework of interdisciplinary cooperation. You also have the ability to quickly familiarize yourself with new problems and to use your own ideas. A high scientific standard in the evaluation, documentation and presentation of results is as natural to you as working in a project team. Independence, a sense of responsibility, commitment and good German and English language skills round off your profile.
